Stuffed Okra (Bharwa Bhindi)

Stuffed Okra (eng. lady's fingers) is a rich and delicious dish made by stuffing okra with a filling made of fried onions, besan and aromatic spices and then stir frying it. This vegetable dish is spicy, soft but crispy and full of flavour. It goes well with roti or paratha.

Ingredients:

Serves 2-4

  • 20-30 okra/lady's finger pieces
  • 2 medium onions
  • 4 garlic cloves, minced
  • 1 cup besan/chick pea flour
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • a pinch of asafoetida
  • 1 - 2 tsp salt or to taste
  • 3-4 tbsp vegetable oil
  • fresh coriander leaves, chopped
  • Preparation time: 15min
  • Cooking time: 15-20 min

How to make Suffed Okra:

  1. Wash okra properly and then dry it with a cloth or pepper towel. (Okra shoul be completely dry, otherwise it will become gooey while cutting and cooking).
  2. Cut the ends and slit it in the center vertically.

Stuffing:

  1. Heat the oil in a non-sticking pan.
  2. Add the garlic and chopped onions. Saute till translucent.
  3. Add garam masala, turmeric powder, hing, red chilly powder, coriander powder, salt and besan. Mix well and cook for about 5 minutes on low-medium heat. Stir constatly so the mixture will not get burn.

Then,

  1. Stuff the besan and spices mixture into the slit okra.
  2. Heat the oil in a large non-sticking pan for shallow frying.
  3. Place okra one by one in the oil. The stuffed side should be on the top. Cook on medium heat for 4 - 5 minutes. Allow the lower portion to get a golden brown then turn it upside down. Cook it for 4-5 minutes. Cover with a lid and cook for few more minutes till okra become soft. Serve hot as a side dish.
