Mango Barfi

Mango Burfi is a soft, melt-in-mouth, fudgy texture Indian sweet. This Burfi is made of milk, paneer, mango puree, flavored with cardamom powder and decorated with pistachios.

Ingredients:

Serves 4

  • 4 cups full fat milk
  • ⅔ cup superfine (powdered) sugar
  • 5 cardamoms
  • 3 tbsp sugar
  • 1 tsp lemon juice or
  • 1 cup mango pure
  • 6 oz/175 g paneer
  • pinch of cinnamon powder (optional)
  • few drops vanilla esence (optional)
  • chopped almonds, pistachios to decorate

How to make Mango Barfi:

  1. Pour the milk into the non-stick pan and bring to boil.
  2. Add cardamoms, sugar and cook for 4 minutes on medium flame.
  3. Add lemon juice and continue cooking stirrlng constantly until the mixture become thick.
  4. Add the mango pure and cook for another 5 minutes. After that test if the mixture is thick enough by putting some on the plate. If should form a soft ball.
  5. Then remove from the heat, put on the plate and let it cool.
  6. Crumble paneer and knead it.
  7. Then, add 3 tbsp of sugar to the pan and cook on low heat for 2-3 minutes.
  8. Cool a bit and add the vanilla essence.
  9. Spread the mixture over the mango mixture.
  10. Sprinkle chopped nuts on top and put to refrigerator for at least 3h. Then cut into pieces and serve.
