Tandoori Masala

Tandoori masala is an Indian spice mix consisting of a variety of spices, including cumin, coriander, cayenne pepper and/or red food coloring to give it a red color. It is used to marinate the meats, seafood, paneer cooked in tandoor oven.

Ingredients:

  • 2 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • 1 tbsp fenugreek seeds
  • 1 tbsp black peppercorns
  • 5 cloves
  • seeds of 4 black cardamom pods
  • 2 tbsp paprika
  • 1 tsp dried fenugreek leaves
  • 1 tsp ground cinnamon
  • ½ tbsp ground ginger
  • ½ tsp red chili powder

How to make Tandoori Masala:

  • Preheat a small skillet over medium-high heat.
  • Add coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, cloves and cardamom seeds and toast shaking the skillet every few seconds for about 1 minute, until fragrant.
  • Remove from the heat and let the mixture cool down.
  • Next grind to a fine powder.
  • Transfer to a bowl and mix in the remaining ingredients.

You don't have ingredients?

If you don't have ingredients you can use a combination of 2/3 paprika to 1/3 cayenne with and a pinch of cinnamon.
