Masala Makki Ki Roti (Spicy Corn Meal Flat Bread)

Masala Makki ki roti is popular flatbread from Punjab. Similarly to Makki ki Roti bread It is made from corn meal or maize flour and aditionaly added green chilies or chili powder to make it hot.

Makki ki roti makes a delicious combo with Sarson ka saag.

Ingredients:

Makes 12

  • 3½ cups corn meal
  • 1 onion finely chopped
  • 1 tsp garlic finely chopped
  • 3-4 green chilies finely chopped
  • ½ cup coriander leaves chopped
  • 1 tsp ajwain
  • 2 tsp salt (or to taste)
  • 1½ cups water (approximatelly)
  • 5 tbsp oil

How to make Masala Makki Roti:

  1. Mix all ingredients except water and oil.
  2. Add 1 cup hot water. Mix with spatula. If it is cool to touch kneed the dough. Add enough remaining water (2 tbsp at the time), mix till dough forms a soft ball.
  3. Make 12 balls approximately 4.5 cm in diameter. Keep covered.
  4. Sprinkle some corn meal flour on the rolling board.
  5. Roll a ball of dough lightly. Dust rolling pin from time to time to avoid sticking. Seal crack by pinching edges and continue rolling into a flat round 14 cm in diameter.
  6. Heat tava on medium heat for about 3 minutes. Brush with oil.
  7. Put the roti on tava. Cook till underside has light golden brown patches (about 2 minutes). Flip the roti over with spatula.
  8. Flip a couple of times and cook till the roti is well browned and cooked from all sides. Press the edges with a spatula so that they get cooked as well.
  9. You may put some olive oil or butter on the sides while cooking. Sometimes, when dough is well done, makki di roti can puffi up.
  10. When done, serve hot, accompanied with yogurt.

Tip: Makki ki roti is not so easy to digest it is important to add ajwain seeds and cook rotis properly.
