Apricot Chutney

Apricot Chutney is a sweet and spicy condiment made with dry apricots and enhanced with ginger and Indian spices. Great with appetizers, Indian breads or toasts.

Ingredients:

  • 1 onion (chopped)
  • 1 tbsp grated ginger
  • ½ tsp curry powder
  • 2 cups finely chopped dried apricots
  • ½ cup vinegar
  • ½ cup sugar
  • 2 tbsp vegetable oil
  • pinch of salt (or to taste)
  • mint leaves to decorate

How to make Apricot Chutney:

  1. In non-stick frying pan, combine oil, onion, and ginger. Stir for few minutes before adding the remaining ingredients.
  2. Add apricots, sugar, curry powder. Let cook for 6-8minutes on medium heat.
  3. Taste a sample, and add salt if desired.
  4. Remove from heat and let cool.
  5. Store in a cool, dark place.
