Chickpea Pesto Salad

Great, healthy salad made of lettuce and chickpeas.

Serves 2-4


  • 1-2 cups of lettuce of your choice
  • ½ cup canned chickpeas (garbanzo beans,) drained
  • 1 tsp cumin seeds
  • 1 tsp oil
  • pinch of salt
  • pinch of pepper


  • ½ -1 cup fresh basil leaves or spinach leaves
  • ½ cup mint leaves
  • 1 tsp garlic-ginger paste
  • pinch of chili powder
  • pinch cumin powder
  • pinch of black pepper
  • salt to taste
  • 1 - 2 tbsp lemon juice
  • 2 - 3 tbsp olive oil
  • ½ cup fresh shreded or desiccated coconut (optional

How to make Chickpea Pesto Salad?

  1. Heat the oil in the pan.
  2. Add the cumin seeds. Roast for 30 sec.
  3. Add chickpeas, salt and black pepper. Saute for about 2 minutes. Set aside.

Prepare the pesto.

  1. Combine washed basil/spinach leaves, 1 tsp garlic-ginger paste, chili powder, cumin powder, black pepper, lemon juice, olive oil and salt in food procesor and blend it for few minutes until smooth. You can add desiccated or fresh shreded coconutif you like to the pesto.


  1. Put the letuce, chickepas in a medium size bowl. Mix it well.
  2. Pour pesto on the top and let it sit for 5 minutes so chickepeas get flavor of the pesto. Serve as a side dish or salad.
