Sambar Powder

Sambar powder is an aromatic blend of a few lentils and whole spices. There are many recipes of Sambar powder. Most of them are made with coriander seeds, cumin and lentils as the base. In some regions of India, ingredients like coconut or cinnamon are added. Sambar Masala is used to make popular Indian dish - Sambar.

Ingredients:

  • ¼ cup coriander seeds
  • 1 tbsp cumin seeds
  • 1 tbsp dried, split yellow chick peas
  • 1 tbsp mustard seeds
  • 2 tsp fenugreek seeds
  • 5-6 dry red chilies
  • ½ asafetida
  • 1½ tsp peppercorns
  • 6 curry leaves

How to make Sambar Powder:

  1. Roast all ingredients together over low heat in a nonstick skillet, until fragrant (just few seconds)
  2. Cool the spices and grind to a fine powder in a small coffee grinder. Store in an air tight jar.

If you cannot source it, use equal parts coriander and cumin, and a touch of turmeric powder and red chili or cayenne pepper powder.
