Green Tomato Chutney

Green Tomato Chutney is a simple flavorful condiment made from raw tomatoes. You can serve it with a cheese plate, spread it on a sandwich or use as a side with kababs and tandoori dishes.

Ingredients:

  • 4-5 medium green firm tomatoes
  • 3-5 green chilies
  • 4 garlic cloves
  • ΒΌ cup cilantro leaves (washed and chopped)
  • 3 tsp sugar (optional) or equivalent amount artificial sweetener
  • pinch of garam masala
  • 1-2 shallot onions
  • 3 tbsp olive oil
  • salt to taste

How to make Green Tomato Chutney:

  1. Heat the pan. Add 1-2 tbsp olive oil and green chilies. Let them roast for 30 seconds.
  2. Place all ingredients (except sugar/sweetener) in a pan with chilies and bring the mixture to boil. Turn heat to low and cook covered until tomatoes are soft.
  3. Uncover and cook until it reaches chutney/relish like consistency.
  4. If using sugar, add sugar and bring to boil. If using sweetner, turn heat off, cool the chutney and then add sweetner and mix.
  5. Taste and adjust seasoning/sweetness/tartness, adding more salt, sugar or vinegar as required.
  6. Allow to cool a little and then transfer chutney to sterilized jars, cover jar tops with cling film and screw lid on.

Chutneys improve in taste as they mature, so leave the jars for few weeks before using it.
