Spinach Raita

Flavorful, whisked until smooth yoghurt mixed with bleanched spinach leaves and a few mild Indian spices.

Ingredients:

  • 1 cup plain yogurt
  • 12-15 spinach leaves, well washed
  • pinch of cumin powder
  • 10-15 raisins (optional)
  • a pinch of paprika powder
  • 2 tbsp onion finely chopped
  • black pepper, salt to taste
  • 1-2 springs of coriander leaves,

How to make Spinach Raita:

  1. Cut the spinach into fine strips. Boil it with a pinch of salt for 3-4 minutes in 1 cup of water, then drain.
  2. Whisk the yoghurt well till absolutely smooth. Season with salt, pepper and cumin.
  3. Add the spinach, and raisins (optional).
  4. Pour into a serving bowl and sprinkle with paprika.
