Goan Curry Paste

Goan curry paste is an essential ingredient in in state of Goa, India. It is made from scratch with coconut, tamarind, ginger, garlic and few spices. Curry paste is cooked first in a little oil to bring out its flavors, then chicken, pork, fish or seafood and /or vegetables are added to the paste. Then stock or coconut milk, or a little of both before slow cooking until it's flavorful and tender.

Ingredients:

  • 2 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 6 dried red chilies
  • 1 tsp turmeric
  • 3 tbsp tamarind pulp
  • 10 garlic cloves
  • 2 inch ginger piece
  • ½ cup fresh coconut (scraped)

How to Make Goan Curry Paste:

  1. Heat the pan. Then dry roast coriander seeds, cumin seeds and red chilies.
  2. Put all the ingredients and roasted spices to a food processor and blend until the paste is smoth.
  3. Let cool, then spoon a paste into a glass jar with a lid.

Tip: To preserve the curry paste, heat a little oil in a clean pan and pour it over the surface of the paste.
