Cauliflower Curry

This delicious Indian Cauliflower Curry is vegan, low calorie and full of flavor. Easy to make and mild in spice, this curry is a healthy meal that’s perfect for the whole family. And best part is that you can get creative with the ingredients.

Serves 4

  • 1 small onion chopped
  • 2 garlic cloves chopped
  • 1 inch fresh ginger peeled/finely grated
  • 1 small head of cauliflower cut into florets
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp cumin
  • 1 chopped tomato
  • 2 tbsp olive oil
  • salt to taste
  • finely chopped cilantro leaves, to garnish

How to make Cauliflower Curry:

  1. Heat the oil in a large, heavy pot. Add chopped onion and cook until they're soft and translucent, about 5 minutes. Add the garlic, ginger and saute until fragrant, about 1 minute.
  2. Add the cauliflower and turmeric, coriander and cumin. Season with salt and pepper (optional) and sauté for 5 more minutes.
  3. Add chopped tomato and cook for additional 20 minutes. When the cauliflower starts sticking to the pan you can add few tablespoons of water. Serve hot.
