Spinach with Potatoes (Palak Aloo)

Spinach and potatoes flavored with Indian spices - amn excellent blend to make the dish superb. Boiled potatoes may be subsituted for raw ones.

Ingredients:

Serves 2-4

  • 1 big bunch of spinach
  • 2 potatoes
  • 1 inch piece of ginger - grated
  • 2 tsp cimin seeds
  • 1 inch cinnamon stick
  • 1 -2 garlic cloves (sliced)
  • 1 onion - finely chopped
  • ½ tsp turmeric powder
  • 1 tsp ground coriander
  • ½ tsp red chili powder
  • ½ tsp garam masala
  • 1 tomato (optional)
  • 1 tsp salt /or to taste

How to make Potatoes with Spinach:

  1. Wash and peel potatoes. Cut into 1 inch pieces.
  2. Cut away stalks of spinach and wash it. Chop the leaves finely into thin strips or ribbons.
  3. Heat oil. Reduce heat. Add cumin seeds and cinnamon. Stir fry for few seconds.
  4. Add potatoes. Stir fry for 4 -5 minutes or until they are golden brown in color and they became a little crispy on the outside. Cover and cook for 10 minutes (adding a little water) till the potatoes turn soft. You can also boil the potatoes first before putting them into the pan. Then stir fry them and when they golden brown remove the potatoes from the pan and put aside. (I do like this method better).
  5. Then add chopped onion, garlic and ginger. Cook / stir fry till golden. Reduce heat.
  6. Add turmeric powder, ground coriander, chili powder, garam masala and salt. Mix well, cook on low heat for a minute.
  7. Add tomatoes and stri fry for 4 minutes till well blended (optional).
  8. Add chopped spinach and cook for 5 minutes on medium heat.
  9. Then add the potatoes and mix till the spinach gets well blended with the potatoes. Serve hot with with rice, roti or paratha.
