Kheer (Rice Pudding)

Kheer is Indian rice pudding made with only three basic ingredients: rice, milk and sugar. It is usually flavored with saffron and cardamom, and topped with nuts and dried fruit. However, to make a good kheer, it needs to have the perfect creamy texture and aroma!

Ingredients:

Serves 4

  • ½ cup rice
  • 5 cups milk
  • ½ cup unsweetened condensed milk or evaporated milk
  • 8 tbsp sugar
  • 4 cardamoms
  • raisins, nuts to decorate

How to make Kheer:

  • Rinse the rice under water and place into the pan.
  • Add the half of the milk and stir.
  • Add cardamoms.
  • Cover and cook for 15-20 minutes until soft.
  • Stir the mixture and try to mash the rice for few minutes.
  • Then add sugar, remaining milk and condensed milk. Simmer gently for about 10 minutes or until the rice is quite thick in consistency. If the kheer is to thick, add a little extra milk.
  • Remove from the heat and pour into serving dishes.
  • Decorate with nuts and raisins. Kheer can be served hot or cold.
