Lemon Rice

This vegan rice recipe is a great addition to any dish. The rice in this dish owes its warm aroma and lovely color to turmeric, which also has some beneficial properites thanks the curcumin, found in this yellow spice.

Serves 4

  • 1 cup basmati rice
  • 1 dried chili
  • 2 tbsp vegetable oil
  • ½ tsp black mustard seeds
  • ½ tsp turmeric
  • 2 tbsp lemon juice
  • finely grated ring of 1 lemon
  • 2 tbsp chopped fresh cilantro to garnish
  • 2-3 tbsp nuts, raisins to garnish
  • carmelized onions to garnish
  • salt to taste
  • 2 cups water
  • 2 tbsp vegetable oil
  • 1-2 lemons to decorate
  • coriander leaves to decorate

How to make Lemon Rice:

  • Rinse the rice in several changes of water and let it soak for 10-15 min.
  • Heat the oil in a heavy bottom pan.
  • Add the mustards seeds and cook over low heat, stirring constantly for 1 minute or until they give off their aroma.
  • Add the chili and stir for 1 minute.
  • Drain the rice and add it to the pan. Add turmeric. Cook, stirring constantly for 2 minutes or until all the grains are coated.
  • Stir the lemon ring, add the salt to taste.
  • Pour in 2 cups of water and return to a boil.
  • Reduce the heat, cover tightly, and let simmer for 8-10 minutes.
  • Remove the pan from the heat and let stand, still covered for 5 min before serving.
  • Put to serving dish and decorate with carmelized onion, fresh coriander and lemon slices.


  • For more flavor you can add finelly gated fresh ginger and 1 green chili.
