Chicken Pulao

This Chicken Pulao is a finger-licking one pot dish made by sautéing pieces of chicken along with onion and tomatoes, and aromatic basmati rice.

Serves 4

  • (2 Ib 3 oz) 1 kg chicken
  • 1 cup basmati rice, washed and soaked in water for 25 minutes.
  • 2 medium onions finely chopped
  • 2 tbsp fresh ginger, thinly sliced
  • 4 garlic cloves, finely chopped
  • 3 green chilies, finely chopped
  • 2 red chilies
  • 1 cinnamon stick
  • 3 black cardamoms
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tbsp lemon juice
  • 1 tsp garam masala
  • 6 peppercorns
  • 2 cups water
  • 4 tbsp vegetable oil
  • salt to taste
  • coriander leaves to decorate
  • cashew nuts to decorate (optional)

How to make Chicken Pulao:

  1. Rinse the rice and soak in the water for 25 minutes.
  2. Heat the oil in a non stick pan.
  3. Put in chopped onions. Fry till the onions turn transparent.
  4. Add garlic and ginger.
  5. Add black cardamoms, cinnamon stick, green and red chilies.
  6. Add pieces of chicken.
  7. Add coriander and cumin powder, salt to taste and stir-fry for 10-12 minutes or until chicken has golden brown color.
  8. Add basmati rice and 2 cups of water. Cover the pan and let simmer over low heat for 8 minutes, or until all water has evaporated.
  9. Transfer the rice to serving dish. Garnish with coriander leaves. Don't forget about serving raita with it.
