Pineapple Pudding

This naturally sweet Pineapple Pudding is made with just few ingredients. It is easy to make and tastes really delicious.

Serves 2

  • 8 oz /225 g canned pineapple chunks, drained
  • 2 eggs
  • 150 ml milk
  • 4 oz /100 g sugar
  • 1/4 tsp ground cinnamon
  • 3 cloves
  • 1-2 tsp sugar

How to make Pineapple Pudding:

  1. Arrange the pineapple pieces in a greased ovenproof dish.
  2. Beat the eggs with the milk and sugar and pour over the pineapple, then sprinkle on the cinnamon and cloves.
  3. Set the dish in a roasting tray of boiling water and cook in the oven at 325F / 160C for about 45 minutes until lightly set.
