Rose Falooda (Gulab Falooda)

Rose (Gulab) Falooda is a dessert drink with rose syrup infused milk, strands of homemade jelly, basil seeds and silky noodles. It is often topped with vanilla ice cream and decorated with crushed pistachios. Falooda is a popular Indian beverage with Persian roots. Rose Falooda is also referred to as faluda or sherbet.

Ingredients:

Serves 2

  • 2 cups milk
  • 2 tsp rose syrup
  • 3 tbsp falooda sev/ vermicelli
  • 2 tbsp sweet basil seeds (tukmaria) –
  • ¼- ⅓ cup red jelly (store bought or made at home from from the packet)
  • vanilla Ice cream – 2 scoops (optional)
  • 1-2 tsp sugar (or to taste)
  • 2 tbsp chopped pistachios
  • 1 tbsp chopped almonds

How to make Gulab Falooda:

  1. Pour water into a cup water. Add subja seeds/ sweet basil seeds. Leave it to soak for 1h or till get white layer on around each seed.
  2. Chop nuts and keep it aside.
  3. Boil the milk and keep it asid to cool off. When cool put to the fridge
  4. Heat 1 tbsp oil in a pot. Add vermicili/ falooda sev. Roast for 1 minute. Next add ½ cup boiling water and cook for 4 minutes. When the verimcelli is cooked, put it to a strainer. Let water drain and keep falooda sev/ vermicelli aside.
  5. Next make rose milk: Add chilled milk, sugar and rose syrup to a blender and blend it until frothy and combined. Keep the rose milk aside.
  6. Finally, put into serving glasses cut into strips jelly as a base layer.
  7. Add half of basil seeds/ tukmaria, over which put a layer of cooked falooda sev/ vermicelli.
  8. Next, pour rose milk to the glass and add remaining basil seeds/ tukmaria seeds.
  9. Before serving put a scoop of vanila ice cream on the top and decorate with chopped nuts and serve it immediately.
