Chili Vinegar

Chilli vinegar infused with chopped or whole green chilies imparts its heat to give the condiment a delicious edginess.

  • 10 green chilies
  • 1 cup pickling vinegar

How to make Chili Vinegar:

  1. Cut fresh chilies into small pieces.
  2. Boil 1 cup good pickling vinegar, leave it to become cold, then pour it over the chilies. Keep the mixture in an airtight container to store until needed, then bottle and use.
