Honey Ginger Dressing

A delicious, multi purpose dressing will turn any salad gourmet. The sweetness of honey will balance the flavor of ginger while enriching the food with antioxidants and vitamins.

Ingredients:

Makes 1 cup

  • 2 inch cube fresh ginger root
  • 1 lemon
  • 2 tbsp honey
  • 1 cup water
  • pinch of turmeric
  • 1 dry red chili (optional)
  • 1-2 black pepper corns (optional)

How to make Honey Ginger Dressing:

  1. Peel the ginger, and roughly chop two - thirds of it. Remove several straps of peel from the lemon.
  2. Mix the water and honey, then add in the slices of lemon and chopped ginger. You may add dry red chili and black pepper corn if you like to spice up the dressing (optional). Bring to the boil, then simmer for 7 minutes. Remove and discard lemon and ginger.
  3. Slice the remaining ginger as finely as possible, then cut into small threads. Remove another piece of peel from the lemon, and cut is as small as possible.
  4. Add the ginger and lemon bits and pinch of turmeric to the syrup. Simmer for 10 minutes. Cool.
  5. Add some lemon juice before use.
