Punjabi Garam Masala

Punjabi Garam masala is an important spice blend used in North Indian cooking. It is very aromatic and flavorful.

Ingredients:

makes ½ cup

  • 1 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • 1 tbsp black peppercorns
  • 1 tsp whole cloves
  • 1 ½ tbsp cardamom seeds
  • 1 cinnamon stick (each 3 inches long), broken into smaller pieces
  • 3 bay leaves
  • 1 tsp nutmeg, grated

How to make Punjabi Garam Masala:

  1. Heat a small skillet over medium-high heat. Once the pan is hot, add all the whole spices to it (except nutmeg).
  2. Toast the spices shaking the skillet every few seconds until you can smell aromas coming through.
  3. Transfer immediately to a bowl to cool.
  4. Once the spices are completely cooled, transfer them to a grinder and grind until you get a fine powder.
  5. Store in airtight jar away from sunlight and heat.
