Apricot Chutney is a sweet and spicy condiment made with dry apricots and enhanced with ginger and Indian spices. Great with appetizers, Indian breads or toasts.
Ingredients:
1 onion (chopped)
1 tbsp grated ginger
½ tsp curry powder
2 cups finely chopped dried apricots
½ cup vinegar
½ cup sugar
2 tbsp vegetable oil
pinch of salt (or to taste)
mint leaves to decorate
How to make Apricot Chutney:
In non-stick frying pan, combine oil, onion, and ginger. Stir for few minutes before adding the remaining ingredients.
Add apricots, sugar, curry powder. Let cook for 6-8minutes on medium heat.
