Tomato Shorba Soup

Delicious, bright red tomato soup, easy to make is one of the classic Indian Soups.

Serves 4

  • 4-5 tomatoes
  • 1 tbsp gram flour (besan)
  • 3 cloves
  • 3 green cardamoms
  • 1 tsp cumin seeds
  • pinch of cinnamon powder
  • 2 bay leaves
  • 3-4 curry leaves
  • 3-5 peppercorns
  • 2-3 slit green chilies
  • 1 tbsp jaggery or 2 tsp sugar
  • 1 tbsp vegetable oil
  • salt to taste
  • pinch of turmeric
  • 1 tbsp chopped coriander for garnish

How to make Shorba Indian soup:

  1. Heat oil in the pan.
  2. Add cardamom, cloves, bay leaves. Saute for few seconds. Add greated ginger and some peppercorns.
  3. Add 1 tbsp besan and roast till slight change in colour.
  4. Add chopped tomatoes and few of coriander stalks.
  5. Saute for a minute, add salt to taste, cinnamon and a pinch of haldi.
  6. Cook on low heat till tomateoes are soft.
  7. When cooked, prepare a thick puree by passing through a sieve.
  8. Add 2 cups of water to the pured tomatoes. Cook for 5 minutes.
  9. Add some heavy cream before serving (optional) and decorate with coriander leaves.
