Cauliflower Soup

This creamy vegan, infused with Indian spices Cauliflower Soup is Healthy and delicious, simple and easy to make. Great lunch snack or appetizer.

Ingredients:

Serves 2-4

  • 1 small cauliflower, broken into small florets
  • 2 potatoes, diced
  • 1 cup water
  • 1 tsp garlic paste
  • 1 tbsp ginger paste
  • 1 tsp turmeric
  • 1 tsp black mustard seeds
  • 1 tsp cumin seeds
  • 1 tbsp coriander seeds, lightly crushed
  • 2 cups vegetable stock
  • salt and pepper to taste
  • 1 tbsp vegetable oil

How to make Cauliflower Soup:

  1. Heat the oil in a large, heavy bottom pan.
  2. Add the cauliflower, potatoes, and water and bring to a boil, then reduce the heat and simmer, covered for about 10 minutes.
  3. In the other pan heat 1 tbsp oil. Add the mustard seeds, cummins seeds and corriander seeds. Stir for a minute. Add garlic paste, ginger paste, turmeric, and coriander seeds and cook stirring frequently for 2 minutes.
  4. When done, add to the boiled cauliflower and potatoes.
  5. Add the vegetable stock and season to taste with salt and pepper. Bring to boil, then cover and simmer for 10 minutes.
  6. Remove the pan from the heat and let cool slightly. Ladle the mixture into a food processor or blender and process until smooth.
  7. Return to the pan and stir in the yogurt. Reheat gently until piping hot.
  8. Adjust the seasoning if necessary, and serve immediately.
