Mixed Beans Salad

This mixed beans salad is made of selecion of beans. Nutritious and healthy salad, serves as a side dish or a light meal on its own.

Ingredients:

Serves 2-4

  • 1 cup kidney beans of your choice (boiled or canned)
  • ½ cup chick peas (garbanzo beans) ½ cup celery, chopped
  • 1 small onion, finely chopped
  • 1 green chili, deseeded and diced (optional)
  • 1 lemon, juiced
  • 15ml (1 tbsp) olive oil
  • ¼ tsp red chilli pepper or paprica
  • ¼ tsp ground cumin
  • salt to taste
  • black pepper to taste
  • handful fresh coriander leaves, chopped to garnish

How to make Mixed Beans Salad:

  1. Chop onion, celery into small pieces.
  2. Wash beans, if canned.
  3. Put all the ingredients into a mixing bowl. Toss and adjust seasonings.
  4. Sprinkle in cumin powder and red chili pepper or paprica. Garnish with chopped coriander leaves. Serve.
