A perfect Indian meal will have dishes balanced by cobering a whole range of flavours from milk to hor and from sweet to sour. There will be dishes that are dry, moist, crunchy, soft and smooth. Some will be served very hot, while other may be chilled. There will be also a wide variety of food: meat, a fish dish, dal or lentils, vegetable dishes, perhaps salad, rice and of course bread. On the side will be several chutneys and cooling raitas.
