KESAR (SAFFRON) DRINK

(serves 4)

saffron 3 pinch
½ cup sugar 
2 cups milk

crushed ice

  • Heat milk in a pan till boils. Add saffron strings and keep on slow heat for few minutes.

  • Mix left milk in the blender with sugar, saffron mixture and ice.

  • Serve cold.

KESAR PISTA MILK     (serves 4)

1/4 cup pistachios
20 almonds

saffron 2 pinch

2 cups of milk
½ cup sugar



 

  • Soak almonds and pistachios separately in water for about 3 h.

  • Grind nuts into a smooth paste by adding a little milk.

  • Heat milk in a pan till boils. Add saffron strings and keep on slow heat for 5 minutes.

  • Add ground pistachios and almonds.

  • Bring to the boil, add sugar stir and take out from fire.

  • Bring to the normal temperature and keep in refrigerator for cooling.
    Serve cool garnished with chopped pistachios.

THANDAI (MILK AND SAFFRON  SHARBAT    (sarves 4 )

½ oz blanched almonds

½ oz pistachio nuts

10-12 green cardamoms, shelled

pinch of saffron fronds

2 oz sugar (or to taste)

4 cups of milk

pinch of ground turmeric

pinch of ground nutmeg or 3 drops nutmeg essence

crushed ice (optional)

This very refreshing Indian drink can be made with hot milk too. In many parts of India a little alcohol is added.

  • Finely grind the almonds, pistachio nuts, cardamoms and saffron.
  • Dissolve the sugar in the milk by stirring.
  • Add the turmeric, nutmeg and ground mixture.
  • Still well and serve, adding crushed ice if preferred.

SMOOTHIE SOOTHER  (makes about 2 cups)

½ in fresh ginger root, peeled and sliced

1 cup fresh pineapple juice

½ papaya, peeled, deseeded and sliced

1 cup plain yogurt

  • Process all the ingredients in a blender until smooth and frothy.

SPICED PISTACHIO SMOOTHIE  (makes about 2 cups)

1/4 cup unsalted, shelled pistachios

1 cup milk

½ vanilla yogurt

pinch of ground cardamom

pinch of ground cinnamon

1 tsp sugar

few drops rose water, or to taste

6 ice cubes

½ in fresh ginger root, peeled and sliced

1 large mango, peeled and pitted

2 peaches, peeled and pitted

8 -10 ice cubes

 

  • Process all the ingredients in a blender until smooth and frothy.

BANANA BUTTERMILK SMOOTHIE

 (makes about 2 cups)

½ cup buttermilk

1 cup milk

1 large banana, sliced

1 tbsp honey

pinch of ground nutmeg or cinnamon

  • Process all the ingredients in a blender until smooth and frothy.

CREAMY MANDARIN SHAKE

 (makes 2 cups)

3 mandarin oranges

1 cup vanilla ice cream

1 cup milk

pinch of ground star anise

pinch of cardamom

pinch of ground cinnamon

few drops rose water

  • Peeled, deseeded and slice the mandarin oranges.
  • Then process all the ingredients in a blender until smooth and frothy.
