About Lassi
Lassi is a Punjabi (North Indian
drink). It is yogurt based shake, either sweet or savory. The most
common flavors include: mango, rose water and plain sugar (sweet lassi),
With its smooth, and refreshing taste is the perfect accompaniment to the
hot and spicy Indian food.
Traditional lassi is sometimes
flavored with ground roasted cumin. With a little turmeric powder mixed in,
it is also used as a folk remedy for gastroenteritis.

SWEET
LASSI
(serves 4)
2
½ cups plain yogurt
1 cup cold
water
4-5 tbsp
sugar (to taste)
finely
chopped pistachios to decorate, crushed ice to serve

-
Pour
yogurt, water, sugar and ice into a blender.
-
Blend on a high setting for 1 minute.
-
Pour
the lassi into tall glasses.
-
Sprinkle with chopped pistachios to decorate and serve
immediately.

MANGO LASSI
(serves 4)
2 fresh mangoes
4 cups plain yogurt
1 cup cold water
8-10
tsp sugar (to taste)
crushed ice
to serve

Place the peeled, seeded and chopped mango in a blender.
-
Add
the yogurt, water, sugar.
-
Blend it until smooth and frothy.
-
To
serve fill glasses with crushed ice, pour in the lassi.

SAVORY LASSI
(serves 4)
3 cups plain yogurt
1 cup cold water.
1 fresh green chili, seeded
and very finely chopped
½
tsp ground cumin,
salt and
pepper,
fresh
cilantro or mint leaves to decorate, crushed ice to serve

-
Pour
the yogurt and water into a bowl and blend for 1 min.
-
Stir
in the chili, cumin, season to taste with salt and pepper.
-
Let
it chill in the refrigerator for 30 min.
-
To
serve, fill tall glasses with crushed ice and pour in the lassi.
-
Sprinkle with cumin.

MINT LASSI
(serves 2-4)
4 tbsp finely chopped mint leaves
1
½
cups plain yogurt
1½
tsp rock salt (kala namak)
½ tsp roasted, ground cumin seeds
½
tsp salt, or to taste
1 cup of water
6-8 ice cubes

-
Put yogurt, mint, cumin seeds, rock salt in
a blender. Blend for a few seconds.
-
Add chilled water and ice cubes. Blend till
frothy. Serve sprinkled with a pinch o ground roasted cumin
seeds and garnish with finely chopped mint

TROPICAL FRUIT LASSI
(serves 2-4)
1 mango, peeled
and chopped
1 papaya
1
½
cups plain yogurt or better buttermilk (very well chilled)
2 tsp honey
few drops vanilla
extract
4-8 ice cubes
|
- Place the mango,
and papaya in a blender or food processor. Leave aside 4 slices
of papaya for decoration.
- Add the
yogurt or buttermilk, honey and vanilla extract.
- Process the
mixture until smooth and frothy.
- Put ice cubes into
tall glasses. Pour the lassi and decorate with slices of papaya.

SWEET AND SOUR
LASSI
(serves 2-4)
8 saffron threads
(plus few for decoration)
1 tbsp boiling
water
1½
cup low fat plain yogurt
½
cup ice water
½
tsp ground cardamom
pinch of ground
cumin
crushed ice to
serve
2 tbsp sugar (or
to taste) |
- Place the saffron
in a small bowl and stir in the boiling water. Let stand for 5
minutes to infuse.
- Pour the yogurt
into large bowl and whisk for 1 minute, until frothy.
Whisk in the ice water, sugar, cumin and cardamom powder, and
saffron with its soaking water. Chill in the fridge for 30 min.
- To serve, fill
tall glasses with crushed ice, pour the lassi and decorate with
a few saffron threads.
